It is the most prevalent hospital acquired infection amongst mechanically ventilated patients in critical care units with an estimated 10-20% incidence rate in some hospitals. Oxidation is a common problem in olive oil due to its high content of unsaturated fatty acid, this leads to nutritional losses and quality degradation, especially under microwave heating. A number of studies have been done to add natural antioxidants to reduce oxidation.
